Farm to Fork Soup

We are very fortunate to live in the small community in the foothills of Placer County, California. Subdivided and marketed in the early 1920’s for its ability to grow substantial citrus crops and harvest many weeks earlier, the Thermalands flourished with farm plots of all sorts. The thermally buffered rolling hills graced with grand oaks have served as the perfect setting to develop our homestead and build our dreams. Thermaland Oaks alludes to the splendor and viability that drew us to plant our roots here to raise crops and critters on our piece of this bountiful earth. I want to share with you some of the variety I am able to grow in the winter to make farm to fork soups.
One of the main ingredients to this soup I am going to share is lamb. I never thought in the history of the world that I would be saying we grass fed this lamb on our homestead. First, it started with me becoming this weird goat lady and now I am talking about raising our own meat. This is the dream that Trevor & I pursued when we purchased raw land. it was a clean slate to create our future.
Soup is one of my favorites with vegetables there is a colorful mix of nutritious ingredients that happen to taste amazing together. The nutrition is endless when it comes to picking what is ready that day in the garden to throw into soup. I have a Nutrition Degree and eating healthy is one of my favorite hobbies. Soup is easy and you can throw on the side a healthy cornbread or wheat roll for a complete meal.
In this soup I am dicing up farm fresh collard greens, rainbow chard, bok choy, blue cabbage, and celery from my plentiful winter garden.

Bean is an amazing hunting dog but the last few years I would say Bean’s happy place is in the garden. She loves to sit by my side, sun bath and pick random snacks for herself.

The best part is with spring time is approaching I made this soup and put half it in a container in the freezer. There is still some rain on the horizon that I can use this next week.
Lets hope for some sunshine soon and we can all start to plant our summer gardens!
