Cookies are a common snack that many people have around their homes. If you’re going to eat cookies, you may want to consider a healthy cookie option, for your overall benefit. Some cookies are high in fiber, which can aid in digestion. Some healthy cookies are low in calories, for those looking to lose weight. On the other hand, some healthy cookies are packed with protein for those that may need to add more to their diet. There are so many options to choose from.
There are gluten-free cookies, sugar-free cookies, and vegan cookies, depending on your dietary preferences. In fact, there are even cookies made out of grain and fruit as well, which makes for a very healthy cookie snack. Whatever your flavor, there can definitely be benefits to snacking on the right kind of cookies.
There is a history of gingerbread-like recipes being used far back into ancient times, but I think it’s interesting that the gingerbread houses we are used to making these days are thought to have come from the story, Hansel and Gretel! While this is a very old recipe, it still has many unknown health benefits.
First, ginger itself has so many health benefits like reducing inflammation and easing stomach pain. It’s used as a natural remedy for indigestion. Ginger has also recently been linked to assisting with gluten-related flare-ups, which is a major plus!
There are actually several different types of gingerbread, and they are differentiated by the ingredients used to make them. Wafer gingerbread is made with mostly nuts and a wafer base and will be much flakier and crispier. Honey gingerbread is one of the most traditional recipes, and will be much doughier. Gluten-Free Gingerbread Cookie Recipe
Healthy Gingerbread Cookies are perfect for any holiday table or Christmas movie marathon night! The goat shape is an added bonus that I love myself. My little homesteading heart could not handle refusing the idea of goat-shaped delicious cookies. I know this time of year there is so much unhealthy food everywhere. To have a little treat that has less sugar makes me feel better. They are gluten-free as well. Here is the recipe that I used!
Gluten Free Gingerbread Goat Cookies
Yield: 1 Dozen
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Healthy Gingerbread Cookie Recipe
Ingredients
5 Tbsp Butter
1 Cup Stevia
1 Egg white
4 1/2 Tbsp Molasses
2 Cups Gluten Free Flour
1 1/2 tsp Cinnamon
1 tsp Baking soda
3/4 tsp Ground Nutmeg
3/4 tsp Ground Allspice
1/2 tsp Salt
1/4 tsp Ground cloves or as much as you would like
Instructions
Whisk together egg, coconut oil and syrup. In separate bowl mix almond flour, cocoa, baking soda, salt, cinnamon and nutmeg until combined.. Add dry mixtures together and stir. Refrigerate dough for about 30 minutes. Preheat oven to 350ºF Mix coconut sugar and cinnamon in small bowl. Roll dough into walnut sized balls then roll balls in sugar mixture. Transfer baking sheet lined with parchment paper or spray.
