Farm Fresh Paleo Broccoli Soup


Freshly picked & home grown broccoli made into a paleo soup to kick the winter time woes.  Perfect for lunch, or an easy weeknight dinner.

The variety of plants I have planted in my winter garden include many that can be put right into the soup pot. I love soups for all the added nutrients you can have in one bowl. Usually I find it harder to eat the amount of greens such as kale, swiss card, and broccoli florets I can consume in more soup pot in an average dish. This recipe usually happens around the time when I have an outpouring amount of broccoli to harvest. Broccoli cheddar soup is one of my favorites but since I tend to shy away from dairy now I make the soup with more vegetables and no cheese. The secret is to roast all the vegetables first before you let them cook together in the soup pot. This will add more flavors to the soup - the caramelized grilled onions, and zesty garlic will add the flavor. The way I thickened up the soup is with a little bit of corn starch which is still Paleo friendly. You can play with the recipe of how much you would like the soup to be thickened. Rule of thumb start with less and then you can add more!

Farm Fresh Paleo Broccoli Soup

My garden sidekick Bean is the best, she is always there to help pick & eat vegetables! Usually she will pick her own snacks but broccoli needs to be cut off the vine for her. She has been known to grab vegetables out of my basket, silly girl! I do not mind I enjoy that my Labradors eat so healthy. I care about their health and longevity as well as my own!

Broccoli is a superfood! If you grow your own broccoli there is added benefits of knowing where your food comes from! But if you do not then there are so many beneficial reasons to enjoy this green hearty vegetable on a daily basis! Broccoli has long been advertised as one of the healthiest veggies because of its nutritional makeup. This superfood is loaded with fiber, antioxidants, and vitamin C!


For the soup I used my immersion blender which is a lifesaver for soups! You need to have one for this to make your life easy. Here are some great ones I linked for easy access to Amazon. Also I love to cook soup in a dutch oven soup pot. I have a large 9 quart Le Creuset in the ombre grey color. One of my absolute favorite kitchen necessities!
