Are you like me and have been home eating all day everyday? I wanted to share a fun healthier version of cheesecake for a spring time treat. I made a Strawberry Cheesecake with Strawberry Bites. I call this the Frankie & Christina baking show I have a new IGTV for you to watch, Let’s be real Frankie is the real star on the screen with how cute she is smiling and giggling. It is worth a watch! Did you know I use to have a little business in college called Sweet Tooth Christina I created beautiful cakes and cupcakes for various events. I dusted off some of my supplies to make these cute strawberry bites. We are back to the basics and slow living I’m teaming up with a couple of my IG besties to bring you some homestead recipes. We all have goats, girls and love the slow living lifestyle.
HOW DO YOU MAKE STRAWBERRY CHEESECAKE STRAWBERRY BITES?
The ingredients are simple and thats what I love about this recipe when I made this Trevor was so excited when he got home for work! These are the ingredients:
Place softened cream cheese, strawberry jam, confectioner’s sugar, and almond extract , and pink food coloring {if using} in a small bowl; stir until well combined and smooth. Put this bowl in the refrigerator for 10 minutes to chill.
While cream cheese mixture chills, rinse strawberries and pat dry with paper towels. Leaving leaves on, slice each strawberry in half lengthwise and set aside on a plate or serving platter with the cut side up.
Dish in the cream cheese mixture into a piping bag fitted with an extra large star tip. Pipe cream cheese mixture onto each of the strawberry halves with whatever design you would like!
Serve immediately or refrigerate for up to about 3 hours.

I also have a cute youtube video I created for the Frankie & Christina baking show. I have a feeling this will not be the last one either! I hope everyone is having nice down time at home and taking in much needed time with loved ones. I know my dogs are loving this! Ps does anyone see Bean is some of the pictures with Frankie? She snuck in.. Bean loves her treats like we do !
