Roasted acorn squash with turkey & onion stuffing recipe is a meal all in one edible bowl! Each serving is filled with healthy lean protein and vegetables. One of my favorite hearty dishes!
It is that time of year and I love easy healthy meals. The ground turkey is a lean protein option and I love cooking dinner with vegetables from around the homestead. Did you know acorn squash stores very well in the cold months, just keep them cool and dry; they’ll last a month or more. They’re a great source of iron, Vitamin A (from all that beta-carotene filled orange flesh!), Vitamin C, and riboflavin. Here is my favorite recipe for ground turkey acorn squash.
Ingredients:
1 lb Ground turkey
2 Acorn squash, small
3 cups Baby spinach chopped
1 clove Garlic
1/4 tsp Garlic powder
2 tsp Parsley
1/2 tsp Rosemary
1/2 tsp Thyme
1/2 cup Yellow onion
1 1/4 tsp Black pepper
1 1/2 tsp salt
2 tbsp Olive oil
Like other winter squash, the whole acorn squash store very well in the cold months, just keep them cool and dry; they’ll last a month or more. Also they are so easy to grow! Water and sunlight for me after aI throw a few seeds in the ground. They’re a great source of iron, Vitamin A, Vitamin C, and riboflavin. Don’t you just love when food is delicious and also so nutritious!?
Instructions
Preheat oven to 425°F. Line a sheet pan with foil and lightly oil.
Prepare acorn squash by cutting off a small amount of the bottom to create a flat surface so the squash do not roll around, and then cut a small portion of the stem off to create another flat surface.
Cut the squash in half width-wise and scoop out the seeds. Place them on the sheet pan and brush olive oil on the inside part facing up on the sheet pan
Sprinkle lightly with salt, pepper, chili powder & herbs Roast for 30 minutes, or until the flesh is fork-tender. Meanwhile, make the filling as the squash cooks in the oven
Turkey Stuffing
In a large saute pan heat olive oil over medium heat. Add the ground turkey and cook until no longer pink, breaking it into small pieces, about 5 minutes. Season the meat with salt and pepper.
Add 2 tablespoon of olive oil to the same pan over medium heat. Add the onions and garlic cook until the vegetables are tender.
Add the spinach and cook until wilted, a few minutes.
Season with 1 teaspoon salt and black pepper, stir to combine and season more as needed. Return mixture to the large pan to reheat if needed.
Scoop about ½ cup of the turkey stuffing into each acorn squash.
Garnish with more parsley, serve with shredded cheese on top if you want! Enjoy!
